Slice the zucchini in thin strips lengthwise with a vegetable peeler. Heat a bit of olive oil in a large pan and grill the zucchini strips until soft and lightly charred, tossing regularly so that they all come in contact with the bottom of the pan.
In a food processor, combine all the ingredients for the pesto (from sundried tomatoes to tomato paste) and pulse into a rough paste, adding water as needed so that it is “spreadable”.
Spread half of each naans with the pesto (you’ll probably have extra, in this case use in other sandwiches or toss into pasta), top with the warm zucchini ribbons and then salad greens, and fold the bread over and serve immediately.
For a “transportable” version, for a picnic or a lunchbox, wait for the zucchini ribbons to cool completely before making the sandwiches, or the residual heat will cook your greens into a soggy mess.
