This grilled balsamic strawberry salad is absolutely easy to make and it's packed with flavors. It's made with a mix of strawberries, balsamic, arugula and spinach. A different but fantastic salad!

Heat a grill pan over medium heat.
Weave the strawberries on to small skewers and once the grill pan is hot, place them flat in pan.
Pour balsamic glaze over strawberries. Flip berries after one minute. Cook for one more minute. Remove from heat.
Add cucumber, mixed greens, strawberries, pistachios, and pine nuts to a bowl.
Combine lemon juice, olive oil, salt, and pepper in a small bowl.
Pour dressing on top of salad, garnish with mint, and serve immediately.
*Balsamic reduction can be used in place of balsamic glaze.
